A few studies that have used the statistical approach to spatial temporal analysis to my knowledge are Gayawan et al (2020) who used the Possion hurdle model to take into account excess zero counts of COVID-19 cases, Briz-Redon and Serrano Aroca (2020) who used the separable random effects model with structured and unstructured area and time effects, and Chen et al (2020) who used the inseparable spatial temporal model.
