The documentation doesn't really make it clear which one I should be using? What are the differences? In fact, in one part of the documentation it says "custom_options below" but custom_payload is in the codeblock.

The PR that introduced custom_payload gives a great overview: #135

Essentially, this (custom_payload) combines the custom_payload option and the append_info_to_payload method override strategy into a single config option
